Txakoli is a young wine with its own personality. It is produced in the Cuadrilla of Ayala using the native grape variety "Hondarrabi Zuri", which gives a greenish-yellow wine, that is fruity, lightly acidic, and with medium alcoholic strength.
Production of this wine dates back to the 10th century, following manual methods based on craftsmanship. This is evidenced by the fact that the grape is not only grown in vineyards, but also on creeping vines in the grounds of country houses; in this case the harvest is for home consumption. Serving temperature is between 8 and 11ºC, and it is drunk as an aperitif and to accompany vegetables, fish, seafood, white meats, cheese, etc.
